Dollie’s birthday is on next Tuesday, but I thought of doing something for her in advance at my house since she mentioned about coming over 2 weeks ago =) Despite the excitement, my mind couldn’t think of anything creative for the surprise birthday party. So I kept it VERY simple: baked a cake, placed it in my room upstairs, and then brought it down when she least expected it. Yeah, nothing special, I know. Yet I took the whole week figuring out what cake to make. My last-minute innovation was Tim Tam-Sunsweet Prune Cake. lol! Sounds weird, right?
Anyway, I made these last night:
Tim Tam-Sunsweet Cake
Ingredients:
1 cup sugar
1/4 cup butter
1 egg
1/4 cup cocoa powder
1/2 tablespoon vanilla essence
Pinch of salt
1/2 tablespoon baking soda
1/2 cup buttermilk
1 cup flour
1/4 cup boiling water
1/2 cup coarsely crushed Tim Tam cookies
7 pitted Sunsweet prunes (chopped into pieces)
Methods:
1. Beat butter and sugar until creamy.
2. Add egg, vanilla, salt, and cocoa.
3. Mix baking soda in buttermilk. When it starts to fizz, mix it with the batter.
4. Add flour and mix until smooth (~3 minutes). Then, add boiling water. Mix again.
5. Stir the crushed Tim Tam cookies and chopped prunes into the batter.
6. Pour batter into a medium round pan.
7. Bake in preheated oven (180 degrees C) for about 30 minutes or until cake tester comes out clean.
Chocolate Sauce
Ingredients:
1 tablespoon unsalted butter
1 tablespoon flour
2 tablespoons cocoa powder
1/2 cup boiling water
2 tablespoons sugar
1 teaspoon vanilla essence
Methods:
1. Melt the butter in a small saucepan.
2. Blend the flour and cocoa into the melted butter.
3. Add the boiling water to the butter mixture gradually. Stir the mixture for 1 – 2 minutes. Then, add sugar and vanilla just before turning off the fire; continue stirring.
4. Set aside to thicken and cool.


Okay, today is The Day! My special guests were Jess, Gillian, and none other than Dollie. Served them some drinks and fruits before the “surprise”. Probably not so much of a surprise as Dollie didn’t seem to have any reaction.

First bite, it tasted a bit strange. But quite yummy on subsequent bites
Gillian loved the cake. She said, “I’ve free Secret Recipe! Next time can Yum Cha at Xian’s bakery shop” haha. I don’t think it was that good. Anyway, thanks Gillian! *grin* The three girls liked the chocolate sauce though. mmm~
P/S: The cake was dense, moist, and not that sweet. Would taste better after chilling. Luckily I didn’t put too much prunes. The amount was just right! So the choc-prune flavour sort of balanced out.
